The coconuts are harvested directly from the tree before they have time to age and drop like the more mature white and brown husked coconuts. How it's made At the end of 2015, the local Indonesian government of Bitung (located in North Sulawesi) initiated a project to help small-scale local farmer families improve their livelihoods. The result of the project is a newly built Virgin Coconut Oil processing facility located in the center of the Bitung area. Local, small-scale farmers sell their coconuts to the factory, where Virgin Coconut Oil is produced by skilled and experienced workers. The production facility provides jobs to 80 people, who run the operations and also educate the farmers about how to select the best young coconuts for producing a high-quality Virgin Coconut Oil. Young coconuts, also known as ma-prao orn, are encased in a uniquely shaped ivory shell.
