Description:

High quality organic, fairtrade certified coffee. 82 points on SCAA scale, Varieties available are: casturra 40 %, catimor 30% and 30% other varieties. Once the harvest of the coffee cherry is performed, the pulp is taken off. Coffee is placed in a pool to ferment for a period of 12-24 hours time (varying by the type of material from the fermenter and microclimate). Subsequently washing is performed, the coffee is then aired so it can proceed to drying platforms and/or concrete patios. Coffee is transferred to CAC Satipo's facilities to conclude exclusive drying of organic coffee only. Parchment coffee is dried to 12% moisture, according to the protocols and standards of the SCAA. Coffee is then stacked in exclusive stores for organic coffee and within these, separation of the Org, T3, T2 is also performed. Each batch is duly identified by signs so it can properly be transported to the processing plant in Lima.
