Banana flour is arguably one of the most nutritious products for human consumption between starches and one of the richest in protein. MAPAJO uses “platano manzano” (banana apple) from its own plots to make this nutritious flour. For processing bananas are first washed, peeled and dehydrated in combined solar-burning ovens, without any chemical or natural additives. This flour can be used in cakes, pancakes, biscuits and as a thickener for soups, creams and purees. Dough with banana flour is lighter and fluffy. For its high nutritional content, this flour is recommended for consumption by children and the elderly. It is known that ancient communities used this flour as a substitute for breast milk, for babies whose mothers could not breastfeed their children.
