Macambo Uses

Macambo is one of the most versatile ingredients to emerge from the Amazon.
Macambo’s applications span a wide range — chocolate, pastry, plant-based cuisine, snacking, and beyond — many of which have no direct equivalent from any other ingredient.
Our low-temperature roasting approach delivers a lightly crunchy, almond-like texture as a baseline. With additional roasting, macambo develops a distinctive flaky crunchiness, breaking into delicate shards. Custom roast profiles are available for professional buyers.
Unlike cacao, macambo is not fermented. Seeds are processed fresh on the day of harvest — peeled, cleaned, and roasted within hours. This gives chocolatiers and processors full control over flavor development, starting from a clean, stable base.
In Chocolate and Confectionery
Macambo, with its light, creamy profile, opens up new possibilities for chocolate makers. Applied like cacao through conching and melanging (with the addition of cocoa butter or another fat), macambo alone produces a delicate, naturally dairy-free “white” bar with a creamy, nutty character. Combined with cacao, it yields a smooth, milk-style bar — without any dairy.
Spain’s Food Idea Lab, one of Europe’s leading gastronomic R&D centers, has documented macambo’s potential in couverture, vegan namelaka, Jijona-style nougat, ganaches, and bonbons. Their work established macambo-based couverture as a delicious white chocolate alternative.
Belgian chocolatier Allo Simonne’s Jaguar bar and spread, made with macambo, have won awards at both the Chocolate Awards Americas and the Academy of Chocolate. Other chocolatiers including Toak and Monarq have developed premium macambo bars.

- Pralines, spreads, and bonbons

In Fine Dining and Professional Kitchens
In the professional kitchen, macambo behaves like a premium nut with its own distinct character. Roasted, it has a spectacular crunch — crisp and clean, more delicate than an almond but with real presence. Ground or blended, it becomes smooth and creamy, with the richness of cashew. The same ingredient, two very different expressions — which is part of what makes it so interesting to work with across both sweet and savory applications.
Macambo applications developed through our chef collaborations include:
- Creamy sauce base — dairy alternative in sweet or savory sauces and dressings
- Macambo plant milk — for creams, coffee drinks, smoothies, and desserts
- Nut-based frozen desserts — macambo paste adds creaminess and characteristic flavor
- Vegan pastry emulsions — body and flavor without artificial stabilizers
- Macambo flour (non-defatted) — high in fiber, fat, and protein; ideal for emulsions and baked goods
- Macambo nibs — crunchy topping for yogurt, bowls, and ice cream
- Ajo blanco — a macambo-based version of the classic Spanish cold soup, substituting almonds
Globally recognized restaurants are incorporating macambo for its combination of gourmet appeal, provenance, and sustainability credentials. Iñaki Murúa and Carolina Sánchez — chef-founders of Restaurante Ikaro (Logroño, Spain — Michelin star 2019, Carolina a MasterChef judge) — describe their first encounter with macambo as “love at first bite.” They now source directly through Canopy Bridge, incorporating it into pralinés, soups, and other recipes. Ikaro was among the first Michelin-starred kitchens in Europe to put macambo on the menu.

As a Snack
With its protein-to-fat ratio and high fiber content, macambo is deeply satisfying without being heavy — a genuine standout among plant-based snacks. The beans work roasted and seasoned (sweet or savory), in nut mixes, and in health-oriented product lines.
